TACO RICE AND CHEESE 1lb of ground beef 1pkg lowrys taco seasoning 1 cup of white rice (I like jasmine rice or basmati) taco fixings cook the taco meat according to directions on the seasoning packet, and cook the rice as well. Then in a bowl add a couple scoops of rice, taco meat, and whatever else you like on your tacos. I add sour cream, cheese, salsa, and crunched up doritos!! Yumm! (and it's cheap too) STUFFED TOMATOES 2-3 whole tomatoes 1pkg goat cheese good olive oil fesh parsley fresh dill preheat oven to 350 cut the tomatos in half and scoop out the guts. Pack with goat cheese (if that is too strong for you cut it with some cottage or riccota cheese) and drizzle olive oil all over the top. Place them in an oven safe dish and then finely chop the dill and parsley and then add it on top. Bake for about 30-45 minutes until tomatos are soft ZUCHINNI FRITTERS 6 small zuchinni grated Salt 1/2 lb of feta cheese 1/4 cup fineley chopped dill 1/4 cup fineley chopped parsley 4 green onions finely chopped 3 eggs well beaten 1/2 cup of flour Fresh ground black pepper Put grated zuchinni in a colander and add salt. Leave until moisture is gone, squeeze dry and put in a large bowl. Add the rest of the ingredients and salt and pepper to taste. If batter is too runny add more flour. Shape about 1 tbs at a time in to coins and fry for about 2-3 minutes each. Serve with garlic aioli |
